Recently, Chop5 Salad Kitchen opened on Polaris Parkway. It’s described as the Chipotle of salads but way healthier. There is a five- step process to eating at Chop5 Salad Kitchen. Step number one is to pick a salad, bowl or wrap. ($6.70) Next, choose the greens, rice or beans. Then, choose five ingredients to go along with that. Any additional ingredients are 75 cents. After that, add premiums or proteins (this is optional and prices range from an additional $1.25-$2.85.) Finally, choose the dressing or drizzle.
Chop5 is co-owned by a group of five men who have talked about starting their own franchise for about 10 years, according to co-owner, Brian Mills. The owners wanted to grow a company that would be different from everything else and was more of a healthy alternative. So, Chop5 came about. They knew that their idea would work in California since Mills lives there, so they chose Columbus to be the location to test it out. According to Mills, Columbus is a great test market for products.
They mix together all of the fresh ingredients the customer chooses in front of them. It is set up so that first there is the lettuce, rice and beans. Next in line are the ingredients customers get to choose five from. According to General Manager Heidi, one chooses five ingredients because of the restaurant name and due to the ve co-owners. After that are the premiums, or meats, such as bacon bits and shrimp, and on hot plates steak and chicken.
The greens customers get to choose from range from romaine and iceberg lettuce, to kale and spinach. There are many ingredients to choose from, including celery, cucumbers, onions, almonds, peppers, mushrooms, quinoa, strawberries, eggs, blue cheese crumbles and croutons.
And if customers are looking for a dressing, this is the place to try new and creative ones such as spicy chipotle, lemon tahini vinaigrette, jalapeno lime vinaigrette or the wasabi green goddess dressing. They allow the customers to try it before they put it on the meal. Aside from their creative twists on dressings, they also have the classics such as ranch, blue cheese and Italian dressings.
Customers create a Build-Your-Own roughly two-thirds of the time, according to Heidi, but it isn’t the only way to get food at this restaurant. There are also menu items such as the Cali Salad, Cobb Chop, Detox Salad, Asian Chicken Salad, Steakhouse Chopped Wedge, Mexican Bowl, Quinoa Bowl, Mediterranean Bowl and many more.
Currently, the only location is in Columbus. According to Mills, they plan to expand. Most likely, they will build out in Columbus then to Memphis and on south. Some of the partners live in Orlando, the Carolinas and California, so expanding there is a thought but not yet determined. The owners are waiting to find organizations and people they know and trust to expand with to keep their idea growing.
Mills also stated an important concept of Chop5 is to get involved in the community and schools with fundraisers and such.
Chop 5 is located at 2044 Polaris Parkway, Columbus, Ohio. The portion sizes are decently-sized for one person. The hours of operation are 11 a.m. to 9 p.m. all week.
